It’s easy to prepare vegetarian, healthy and delicious recipes with the right ingredients. The secret is not to choose pre-cooked food from the supermarket, but to buy real ingredients and then to combine them to make something special. Like this recipe of baked eggplant on a bed of veggies.
In fact, it is more than just “a bef of veggies”, you will see but the result is spectacular. Healthy, delicious and, let’s not forget… instagramable.
Keep in mind that whenever you have in the plate something colourful, fancy and made by yourself, you can call yourself a chef, you can put that dish on Social Media and you can be proud: you did something for your own health.
Baked Eggplant on a Bed of Veggies – what ingredients do you need
As always, we have some “must include” ingredients and some other that can vary. Again, quantities are up to you too. Of course, if you follow the below recipe, you can’t go wrong in terms of taste and amazingness.
So, you need:
salt, pepper, olive oil, lemon juice
lettuce (green salad)
some other type of veggie (like kale, red lettuce, spinach)
pomegranate seeds (a must have ingredients)
soy sauce (optional – I don’t eat it soy, but I prepared this dish for some friends who do eat soy, so it is up to you, still, I don’t recommend soy for anyone)

âž¡ï¸ Take the eggplants and wash them very well. Do not peel them.
âž¡ï¸ Cut the eggplants lengthwise.
âž¡ï¸ Take a tray and cover it with a baking paper.
âž¡ï¸ Put the eggplants, and sprinkle olive oil, salt, pepper and sesame seeds.
âž¡ï¸ Bake till the eggplants are browned.
âž¡ï¸ In the meantime or afterwards, make a salad from lettuce, pomegranate seeds, mushrooms (washed, unpeeled and cooked in a little bit of olive oil first), sapt, pepper, olive oil and lemon juice.
âž¡ï¸ Mix all these very well and place over it the baked eggplant.
If you like wine, I recommend you eating this delicious vegetarian dish with a glass of Cabernet Sauvignon or Syrah.
You can serve the dish like this or you can pair it with cashew cheese or coconut yoghurt. These combinations compliments themselves very well.
