    “Oriental Salad” - this is how my father called this delicious and healthy salad, made with very few and simple ingredients. Below you have my recipe, together with some tips & tricks in order to make it even tastier.

    Oriental Salad – what ingredients do you need?

    You need fresh and, if possible, organic products. We always buy them from the local market or from the countryside. Besides, you also need pickled cucumbers and pickled red peppers. In my country we do that at home, but if this is not your case, I think you can find it in a local store.

    Oriental Salad – Ingredients:

    5 potatoes
    3 pickled cucumbers
    10 olives
    1 small red onion
    1 pickled red pepper
    Salt, pepper
    Apple cider vinegar or another type of vinegar/ Lemon Juice
    Olive oil
    Parsley finely chopped (optional)

    Directions:

    Boil 5 potatoes in water with a little bit of salt.

    In the meantime, prepare the rest of the salad.

    Cut the cucumbers, add them into a bowl with the olives, a red onion, Julien sliced, a pickled pepper cut into slices.

    When the potatoes are boilt, take them off, peel them, cut into cubes, add them into the bowl.

    Gently mix everything with salt, pepper, 1 teaspoon of vinegar or lemon juice and a little bit of olive oil.

    You can also decorate with fresh parsley but this is optional.

    Oriental Salad - can be enjoyed as it is or you can pair it with something else

    Some might say this is a way too simple dish. Yest, but it is nourishing, delicious and, besides, it can accompany other dishes anytime.

    Here, depends if you are vegetarian or not.

    You can combine it with some potato chips, vegetarian meatballs (I have a delicious recipe, here it is), and with some other dishes with rice.

    If you are not vegetarian, of course, things might get simpler, but I won't name here the variants, as I want this recipe to be a vegetarian one.
